Most beginner vegetable-garden lists try to teach you everything. This one is the set I keep recommending — the 15 crops that produce reliably for first-year gardeners, taste meaningfully better than the grocery store, and forgive most of the standard beginner mistakes.
How we chose
Three criteria: productive (yields enough to be worth the space), beginner-tolerant (survives missed waterings, common pests, soil that isn't perfect), and noticeably better fresh (the home-garden version is meaningfully better than what you can buy).
1. Cherry Tomatoes
The single most productive vegetable per square foot for a beginner. 'Sungold' (orange) and 'Sweet Million' (red) reliably produce hundreds of fruits per plant. Plant after last frost, cage at planting, water deeply, mulch.
2. Bush Beans
No trellis needed. Direct-sow after last frost; pick at finger thickness for tender pods. 'Provider' and 'Contender' are the workhorse cultivars. Replant every 3 weeks for continuous harvest.
3. Leaf Lettuce
Direct-sow in cool weather (50-70°F). Cut-and-come-again — clip the outer leaves and the center keeps producing. 'Black-Seeded Simpson' and 'Buttercrunch' are reliable. Bolts in heat; replant for fall.
4. Zucchini
One plant feeds a household. Pick at 6 inches — large ones are seedy and watery. Watch for squash vine borer in July. 'Black Beauty' and 'Costata Romanesco' are the home-garden classics.
5. Basil
Plant after last frost when nights are above 50°F. Pinch the first flower buds; keeps the plant producing leaves. 'Genovese' for pesto; 'Sweet' for general use; 'Thai' for Asian dishes. Pet-safe.
6. Cucumbers
Trellis or sprawl. 'Marketmore' for slicing; 'Boston Pickling' for pickles. Pick small for the best flavor. Mulch heavily; consistent water prevents bitter cucumbers.
7. Radishes
Fastest vegetable to harvest — 25-30 days from seed. Direct-sow in cool weather; sow every 2 weeks for continuous harvest. 'Cherry Belle' and 'French Breakfast' are the standards.
8. Sugar Snap Peas
Pick five from this list for your first 4×8 raised bed. Resist the urge to plant all 15 in year one — the bed that grows everything badly produces less than the bed that grows five things well.
